Process Description
Microwave Heating System:
(1) Microwave heating is a heating method that relies on the material to absorb microwave energy and convert it into heat energy, thereby causing the material itself to heat up as a whole at the same time. Due to its high-frequency characteristics, the microwave electromagnetic field performs heating at an astonishing speed of billions of times/second. Periodic changes, after the polar molecules in the material (typically water molecules, proteins, nucleic acids, fats, carbohydrates, etc.) absorb microwave energy, they are arranged in an orderly manner under the action of the microwave electromagnetic field, changing their original randomly distributed orientation. Under the action of high-frequency electromagnetic fields, these polar molecules also make polar movements of the electric field at the same speed as the alternating electromagnetic field changes, which will cause the movement and rotation of the molecules, resulting in frequent collisions between molecules and a large amount of friction. Heat is expressed in the material in the form of heat, causing the temperature of the material to rise rapidly in a short period of time and drying out water molecules quickly.

(3) Characteristics of microwave heating:
- Penetrating heating, fast heating speed; its penetration distance, microwave heating makes the heated object itself become a heating object, which is called the overall heating method. It does not require the process of heat conduction, so it can achieve heating in a short time. During microwave heating, all parts of the object, regardless of their shape, can usually penetrate the electromagnetic wave evenly, causing the water molecules inside the object to collide violently and squeeze each other to generate heat, causing the water inside the object to evaporate quickly, so as to achieve the effect of quick drying.
- Uniform heating: When heating with microwaves, all parts of an object, regardless of their shape, can usually be evenly penetrated by microwaves to generate heat, so the uniformity is greatly improved, which can avoid the phenomenon of external burns and internal growth, external dryness and internal wetness, and improve product quality.
Air cooling system:
Square exhaust fans can be used to accelerate the cooling of baked products with natural wind and shorten the time to enter the next process.
